The seasonal menu at Coombe – The Melba Estate in Coldsteam, at the gateway to the lush Yarra Valley, mirrors the culinary principles of renowned chef Alberto Escoffier, who created Peach Melba and Melba Toast for the iconic Australian soprano Dame Nellie Melba when she was based in Paris in the 1890’s. Fundamental to Escoffier’s approach to food was that the best cooking always used the produce of the season.
