Stephen Mercer has had an award winner career in hospitality for more than 20 years, both here in Melbourne and overseas, including at the Michelin Starred Frankfurter Hof Hotel in Frankfurt, Dorchester Hotel in London, Jacques Reymond’s Restaurant in Windsor, and at Adams of North Riding in St Andrews. In 1997 Stephen, with his wife Ute, opened Mercer’s Restaurant in Eltham, where they continue to run the region’s most prestigious dining room. Mercer’s Restaurant has twice won the Restaurant and Catering Association Food and Beverage Championship of Victoria, eleven times been awarded a chef’s hat in the Age Good food Guide and in 2014 was judged to be the best formal modern Australian Restaurant in Melbourne at Victoria’s Awards for Excellence.

Frank Torres was born in Colombia South America in 1974 and migrated to Australia 25 years ago. Once he finished his Chef apprenticeship in Melbourne, he took over his first restaurant in Lilydale called Margaritas where he became well known for his delicious Latin American flavours. He also served as a presenter and resident chef on Fusion Latina, a TV program on channel 31 informing everyday Australians about Latin American culture and food in Melbourne.
